Tonight the Houston Rockets host the Memphis Grizzlies; with James ‘The Beard’ Harden returning from a one game suspension, it promises to be a nail biter! But ribs taste nicer than nails, so tonights game time snack is wet and dry ribs.
In America there are two main ways ribs are cooked; wet and dry. Texans often apply a sauce to the ribs, making them wet. As the Houston Rockets are from Texas, the wet ribs will be representing them. For true Tennessee style ribs, no sauce is needed, just a sweet, salty dry rub. And, you guessed it, the dry ribs serve as the Memphis Grizzlies.
All of the ribs were smoked for three hours; using Jack Daniels wood chips (another shout out for Tennessee!). This gave the meat a great smoky depth. The BBQ sauce was then lathered onto half the ribs, I used Sweet Baby Rays whilst the other half crisped up nicely. I’ll release the full recipe shortly so keep your eyes peeled!
